A friend and I are planning to operate from a peak in the Mourne Mountain range, Butter Mountain - is there any particular reason this summit isn’t a recognised SOTA summit? It is 500masl Latitude: 54.184981 Longitude: -6.048091

Insufficient prominence. It only has 93m and you need 150m in that part of the world.
